Nestled in the heart of Washington, D.C., The Dabney is a one-Michelin-star restaurant specializing in Mid-Atlantic cuisine. Located in Blagden Alley, this celebrated eatery is a true hidden gem, offering a farm-to-table dining experience that highlights the region’s finest seasonal ingredients.

Discovering The Dabney: A Warm Welcome

Tucked away in a narrow alley, The Dabney’s entrance is marked by understated charm, with a garage-style roll-up door and the iconic Michelin Guide logo. Step inside, and you’re greeted by a cozy, rustic interior. During our winter visit, we were warmly welcomed with a complimentary apple cider switchel, sprinkled with squash seeds – the perfect antidote to the chilly D.C. evening.

Rustic Elegance: The Dabney’s Interior Design

The Dabney’s decor embodies rustic minimalism. Natural greens and oranges adorned with cloves serve as holiday decorations, enhancing the warm and festive ambiance. Exposed brick walls, wooden tables without tablecloths, and antique accents create an inviting and unpretentious setting. The open kitchen further connects diners to the culinary magic.

Shively Old Fashioned: A Perfect Start

The evening began with expertly crafted Shively Old Fashioned cocktails. A mix of Michter’s small batch bourbon, single barrel rye, cane sugar, and Angostura bitters, the drink was perfectly balanced, with a single clear-ice cube adding a touch of sophistication.

A Feast for the Senses: The Dabney’s Tasting Menu

Snack Board: A Flavorful Prelude

The tasting menu started with a beautifully curated snack board featuring:

1. Moon Valley Carrot Pudding with Sweet Potato Crisp – A delightful surprise, even for non-carrot lovers.

2. Catfish Hush Puppy – The only dish we found underwhelming.

3. Foie Gras with Apple Stack Cake – Luxurious and flavorful.

4. Baby Kohlrabi with Tahini and Lemon – A crunchy, sweet revelation.

First Course: Cape Charles Rockfish Crudo

The rockfish crudo, served with fennel, Asian pear, and bhumi yuzu, was paired with Olivier Marteaux Champagne. The citrus notes and crisp champagne created a harmonious start.

Second Course: Oyster Pie with Caviar

This indulgent dish paired beautifully with Thibaud Boudignon Rosé de Loire. For our oyster-allergic guest, the restaurant seamlessly provided a potato hash with caviar alternative, demonstrating impeccable service.

Third Course: Carrots Elevated

Cooked in beef tallow and topped with a beef fat hollandaise, these carrots were a surprising hit, even for non-carrot fans. Paired with Le Roc Des Anges Llum, the dish was both hearty and refined.

Fourth Course: Stuffed Collard Greens

The collard greens, stuffed with chicken and sweet potato, paired with a vibrant Beaujolais Domaine Grégoire Hoppenot Fleurie ‘Les Garants,’ showcased The Dabney’s skillful balance of flavors.

Main Course: Autumn Olive Farms Pork Loin

A celebration of Mid-Atlantic flavors, the main course included pork loin, country sausage stuffing, hearth-smoked ham, and Anson Mills cornbread. The Luis A. Rodriguez Vazquez Tinto Ribeiro provided a light, fruity complement to the rich flavors.

Intermezzo: Fermented Peach Sorbet

The fermented peach sorbet with crimson crisp granita served as a light palate cleanser. While not extraordinary, it fulfilled its role between courses.

The meal concluded with a Paw Paw cheesecake, black walnut crumble, and poached Magness pear. Paired with Linden Petit Manseng Demi-Sec, a local Virginia wine, it was a sublime finale to an unforgettable evening.

Final Touches: A Memorable Farewell

The Dabney’s attention to detail extended beyond the meal. We were treated to mini cookies as a sweet farewell and apple cider donuts to-go – a thoughtful gesture that left a lasting impression.

The Dabney stands out for its commitment to local farms, small wineries, and seasonal ingredients. It reminded us of our time in South Africa where we dined at the Hari Kitchen.
